The only choice for this appallingly hot week. Champions of warm weather — cool, crisp and at home in the simplest recipes.

Cucumber, cherry & goat’s cheese salad

Recipe
Makes 4 portions


400g small or baby cucumber, washed and finely sliced on a bias (or use a large cucumber sliced lengthways, then finely sliced on a bias)
300g cherries, washed, halved & pitted
150g goat’s cheese, crumbled
1 small head of fennel, washed and finely sliced and herbs picked (keep both in cold or iced water and drain before mixing the salad)
A big handful (around 50g) of watercress or rocket, washed
1.5 tbsp balsamic vinegar
1 tbsp runny honey
2 tbsp pine nuts, toasted (in a pan or low oven until golden)
Olive oil
Salt & pepper

  1. In a large mixing bowl place the cucumber, half the cherries, watercress/rocket, fennel & herb

  2. Dress with the balsamic vinegar, honey, olive oil, salt & pepper to taste

  3. Spoon into a serving bowl, top with the goat’s cheese and remaining cherries. Scatter over the pine nuts
